Dinner Menu
First Course
Cocktail Hour
Salvatore’s Charcuterie Display
Imported and domestic cheeses, Italian cured meats, Salvatore’s olive tapenade, and classic bruschetta served with crackers and crostini
Passed Hors D’ouevures
Seared Shrimp Scampi
Spinach and Artichoke Cups
Pairing
Orin Swift | Chardonnay
Tasting Notes: Mannequin pours a luminous gold core with flecks of emerald, which appear stunning in the glass. Aromatic notes of yellow peach, crème fraiche and graham cracker emanate without much coaxing. On the palate, bright hints of white peach, bosc pear, caramel apple, candied walnut and lemon pith envelop and coat effortlessly. A round finish and supple mouthfeel give way to a touch of toffee at close.

Second Course
Entrée
with braised beef short rib, and aged parmesan
Pairing
Orin Swift | Red Blend
Tasting Notes:
Eight Years in the Desert appears to be almost black, but upon closer inspection, a dark crimson hue starts to shine through, with a tinge of purple on the rim. The nose is rife with notes of ripe blueberry, black plum, wild raspberry, espresso bean, sweet oak, and a hint of crème de menthe and cedar. The entry is akin to walking through a tunnel of velvet walls with blackberry jam, reduced strawberry, and a touch of rhubarb. Bright acidity throughout the palate, the wine closes with round, ripe tannins, fresh plot, and dark chocolate.

Third Course
Entrée
Arugula & Frisée
carrot, pickled red onion, tangerine with goat cheese crumbles, and champagne vinaigrette
Pairing
Orin Swift | Sauvignon Blanc
Tasting Notes:
Blank Stare opens with a luminous white gold in the glass and tropical aromatics. Starting with ripe passionfruit, mangosteen, and guava, the nose becomes even more vibrant with fresh cut grass, gooseberry, coriander, and lemongrass. The palate borrows notes from the tropical nose with a broad body and focused intensity that closes with length and everlasting acidity.

Fourth Course
Entrée
with demi glace and rosemary garnish, served with parmesan risotto and roasted broccolini
Pairing
Machete
Orin Swift | Petite Sirah, Syrah & Grenache
Tasting Notes:
An opaque violet ink with a vivid, neon purple rim. Immediately, the wine’s aromatics entrench with notes of plum preserves, wild blackberry, slate, and crushed gravel—intense and brazen. The palate continues the invasion with loads of texture whilst the minerality keeps things in check—tastes of marbled leather, dark chocolate and river rocks with grippy tannins accentuating the close

Fifth Course
Entrée
Pairing
Advice from John
Orin Swift | Merlot
Tasting Notes:
Deep garnet core and a brooding cardinal rim. From the get-go, the aromatics jump from the glass with a perfume of blackberry, boysenberry, lilac, graphite, and tarragon. Ripe blue fruits are prominent upon entry alongside a touch of savory and dried cherry covered in dark chocolate. Texture abounds with an energetic presence, leading to a finish of nicely structured tannins and elegant lift.
